机电工程学院是徐州工程学院最早设立的系部之一，创建于1985年，原名食品机电系，2000年食品专业分离后更名为机电工程系，2006年升级为二级学院，更名为机电工程学院，是培养机电类专业人才的摇篮。
机电工程学院目前设有机械设计制造及其自动化、工业设计、材料成型及控制工程、机械电子工程、机器人工程等五个本科专业，全日制在校生2292人。专业教师中有教授10人，江苏省“333工程”中青年学术带头人4人，江苏省“六大高峰人才”3人，江苏省“青蓝工程”中青年学术带头人1人、优秀青年骨干教师5人，已形成了老、中、青相结合，职称结构合理的较强师资队伍。
